KIK Greek yoghurt basque mini cheesecakes

 

KIK Greek yoghurt Basque mini cheesecakes will fill your heart with joy as it gives you the satisfaction of eating delicious cheesecake without the compromise in calories. These mini cheesecakes look as beautiful as they are scrumptious. With a little bit of cream cheese, and a little bit of Greek yoghurt, this dessert can be healthy without compromise. Try this simple recipe below and lets us know how you like it.

Ingredients:

Filling:
1/2 cup light cream cheese
1/2 cup KIK Greek yoghurt (vanilla)
1 tsp of maple syrup
1 squeeze of lemon
1 egg
1 tsp of baking powder
3-4 cupcake paper liners

Blueberry jam:
Handful of blueberries
1 tbsp honey
3 tbsp KIK Granola

Instructions:

1- Blend all filling ingredients until batter is smooth.

2- Preheat oven to 200 degrees C.

3- Distribute all the filling mixture into the cupcake paper liners and bake for 20-25 mins.

4- While the cheesecake base is baking, start working on the blueberry jam. 

5- On a medium/hight heat, cook blueberries until soft, and then add honey to sweeten it.

6- Add a little bit of water to help it achieve the right consistence. add 1 tbsp at a time so that it doesn't get watered down.

7- When mini cheesecakes and fully baked, put them on a cooling wrack for 10-15 mins before spreading blueberry jam all over the top.

8- Add 1 tbsp of granola on top of each individual mini cheesecake for the perfect crunch.

Notes:

- You can increase sweetness of cheesecake by adding 1 tbsp of maple instead of 1 tsp

- You can substitute honey with maple syrup.

- You can also add extra stevia to the jam for more sweetness without extra calories.
